If there's one food group I can't resist, it's dessert. Not a food group, you say? Just watch me at the buffet at my parent's country club on Easter. From apple crisp to crème brûlée, mini carrot cheesecakes to chocolate torte, there isn't a post-dinner sweet I'm not willing to try (and I'll probably try yours, too). Though there's nothing wrong with indulging one's appetite every once in a while, sometimes I wish my guilty pleasure wasn't so guilty. The answer? Enter the title of this post: Peanut Butter Chocolate Chip Oatmeal Balls!
I wish I could take credit for inventing these delectable bites of chocolate peanut buttery goodness, but in fact it was my roommate who turned me on to them. Rather, I saw a tupperware container of these curious little snacks in our fridge one day and had to sneak a taste - and oh my, was it heaven. When she got home and told me how easy they are to make, I gave them a go myself. And now? We have anywhere from 20-50 of these guys sitting in our fridge at a time. They are so delicious and so easy to make - not to mention way healthy!
Peanut Butter Chocolate Chip Oatmeal Balls
- 1 and 1/2 cups of uncooked Quaker oats
- 3/4 cup peanut butter (substitute almond or sunflower seed butter here for those with peanut allergies)
- 2 tbsp honey
- 2 tbsp flax seed
- 1/2 cup peanut butter chips
- 1/2 cup chocolate chips
- 2 tbsp coconut shavings (optional)
- 1 tsp vanilla extract
